Method
- Preheat the oven to 425°F and line a large sheet pan with parchment paper or lightly grease it.
- In a mixing bowl, toss the red potatoes with olive oil, garlic, Parmesan cheese, salt, and pepper.
- Spread the potatoes over one-third of the sheet pan and bake for 10 to 15 minutes.
- Meanwhile, combine the chicken with olive oil, garlic, Parmesan, breadcrumbs, salt, and pepper until evenly coated.
- Remove the sheet pan from the oven and place the chicken in the center section.
- Toss the green beans with olive oil, garlic, salt, pepper, and Parmesan cheese if using.
- Add the green beans to the remaining section of the sheet pan.
- Return the pan to the oven and bake for about 25 minutes, or until the chicken reaches an internal temperature of 165°F.
- Optional: Broil on high for 4 to 5 minutes for extra crispiness.
- Remove from the oven and let rest for a few minutes before serving.
Notes
Chicken thickness affects cooking time; thicker pieces may need a few extra minutes. Season gradually and adjust to taste at the end. For extra crispiness, place the chicken on a rack over the sheet pan. Italian seasoning or oregano can be added for more flavor. Serve immediately for best texture.
