Ingredients
  

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 2 cups semi-sweet chocolate chips

Method
 

  1. In a medium bowl, combine peanut butter and softened butter. Beat until smooth and creamy.
  2. Gradually stir in powdered sugar until a thick dough forms. The mixture should be firm enough to roll.
  3. Roll dough into 1-inch balls and place on a lined baking sheet. Chill in the refrigerator for at least 30 minutes.
  4. Place chocolate chips in a microwave-safe bowl. Heat in 30-second intervals, stirring after each, until melted and smooth.
  5. Using a fork, dip each peanut butter ball into melted chocolate, coating it completely. Tap off excess chocolate.
  6. Return the chocolate-covered balls to the lined sheet. Refrigerate until chocolate is firm.

Notes

For smoother dipping, add 1 teaspoon of coconut oil to the melted chocolate.
If you want “Buckeyes,” only dip the balls partially, leaving the tops uncovered for a peanut butter look.
Double the recipe if making for holidays or parties—it’s always a crowd favorite.
