- Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or grease lightly with butter.
- In a microwave-safe bowl, melt the butter and let it cool slightly.
- In a large bowl, combine melted butter, peanut butter, brown sugar, and granulated sugar. Stir until smooth.
- Beat in eggs one at a time, then add vanilla extract and mix until creamy.
- In a separate bowl, whisk together flour and baking soda. Gradually add to the wet mixture until just combined.
- Gently stir in butterscotch chips, ensuring even distribution.
- Spread the batter evenly into the prepared pan and smooth the top. Bake for 25–30 minutes, or until edges are golden and a toothpick inserted in the center comes out clean.
- Allow bars to cool completely on a wire rack before lifting them from the pan and cutting into squares.
Notes
For a richer flavor, use dark brown sugar instead of light. Add extra butterscotch chips on top before baking for a bakery-style look. Store bars in an airtight container at room temperature for up to 4 days. For an extra indulgent touch, drizzle melted chocolate or peanut butter on top once cooled.
