Ingredients
  

  • 1/2 cup unsalted butter, melted
  • 1 cup creamy peanut butter
  • 1 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup butterscotch chips

Method
 

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or grease lightly with butter.
  2. In a microwave-safe bowl, melt the butter and let it cool slightly.
  3. In a large bowl, combine melted butter, peanut butter, brown sugar, and granulated sugar. Stir until smooth.
  4. Beat in eggs one at a time, then add vanilla extract and mix until creamy.
  5. In a separate bowl, whisk together flour and baking soda. Gradually add to the wet mixture until just combined.
  6. Gently stir in butterscotch chips, ensuring even distribution.
  7. Spread the batter evenly into the prepared pan and smooth the top. Bake for 25–30 minutes, or until edges are golden and a toothpick inserted in the center comes out clean.
  8. Allow bars to cool completely on a wire rack before lifting them from the pan and cutting into squares.

Notes

For a richer flavor, use dark brown sugar instead of light. Add extra butterscotch chips on top before baking for a bakery-style look. Store bars in an airtight container at room temperature for up to 4 days. For an extra indulgent touch, drizzle melted chocolate or peanut butter on top once cooled.
