Ingredients
  

  • 1 lb ground beef sausage (mild or spicy)
  • 8 oz cream cheese, softened
  • 1 can Rotel diced tomatoes with green chilies, drained (10 oz)
  • 2 cups shredded sharp cheddar cheese
  • 1 1/2 cups Bisquick or all-purpose baking mix
  • 1/2 tsp garlic powder (optional)
  • 1/2 tsp onion powder (optional)
  • 1/2 tsp smoked paprika (optional)
  • pinch cayenne pepper (optional)
  • chopped fresh parsley (optional, for garnish)

Method
 

  1. Soften the cream cheese and drain the Rotel thoroughly.
  2. Combine sausage, cream cheese, Rotel, cheddar, and Bisquick in a large bowl. Mix by hand until fully combined.
  3. Roll into 1-inch balls and place on a parchment-lined baking sheet, spaced 1 inch apart.
  4. Preheat oven to 375°F (190°C). Bake for 18–22 minutes, or until golden and cooked through.
  5. Cool slightly, garnish with parsley if desired, and serve with dipping sauces.

Notes

  • For best texture, do not skip draining Rotel.
  • For extra browning, broil sausage balls for 1–2 minutes at the end of baking.
  • This recipe freezes exceptionally well for quick future appetizers.
