- Toss beef chunks with salt, pepper, onion powder, and thyme. Add the beef and halved potatoes to the slow cooker.
- In a bowl, combine melted butter, minced garlic, and Worcestershire sauce. Pour evenly over the beef and potatoes.
- Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until beef is fork-tender and potatoes are cooked through.
- Stir gently, garnish with fresh parsley, and serve warm.
Notes
Using sirloin results in a slightly leaner and more tender dish than stew meat. Add vegetables in the last 2 hours of cooking to prevent them from becoming mushy. For extra flavor, sprinkle with freshly grated parmesan before serving.
