Slow Cooker Garlic Butter Beef Bites & Potatoes

Ingredients
  

  • 2 lbs beef stew meat or sirloin, cubed
  • 1.5 lbs baby potatoes, halved
  • 4 tbsp unsalted butter, melted
  • 5 cloves garlic, finely minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp onion powder
  • salt and pepper, to taste
  • fresh parsley, for garnish (optional)

  • Slow cooker (6-quart recommended)
  • large mixing bowl
  • Sharp knife and cutting board
  • Measuring spoons and cups
  • wooden spoon or spatula

Method
 

  1. Toss beef chunks with salt, pepper, onion powder, and thyme. Add the beef and halved potatoes to the slow cooker.
  2. In a bowl, combine melted butter, minced garlic, and Worcestershire sauce. Pour evenly over the beef and potatoes.
  3. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until beef is fork-tender and potatoes are cooked through.
  4. Stir gently, garnish with fresh parsley, and serve warm.

Notes

Using sirloin results in a slightly leaner and more tender dish than stew meat. Add vegetables in the last 2 hours of cooking to prevent them from becoming mushy. For extra flavor, sprinkle with freshly grated parmesan before serving.
