Snickerdoodle Cobbler

A warm, gooey snickerdoodle-inspired cobbler with a soft cinnamon-sugar cake on top and a rich, saucy layer underneath. Perfect served warm with ice cream.

Ingredients
  

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup granulated sugar
  • 1/2 cup whole milk or milk alternative
  • 2 tbsp unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1 tsp ground cinnamon
  • 1 1/2 cups hot water
  • 2 tbsp unsalted butter, melted

Method
 

  1. Preheat oven to 350°F (175°C) and lightly grease a baking dish. Whisk flour, baking powder, salt, cinnamon, and sugar. Stir in milk and melted butter until smooth. Pour batter into the dish.
  2. Mix granulated sugar, brown sugar, and cinnamon. Sprinkle evenly over the batter.
  3. Combine hot water and melted butter. Slowly pour over the batter without stirring.
  4. Bake for 35–40 minutes until the top is golden and set.
  5. Cool for 10 minutes before serving warm. Add ice cream, whipped cream, or caramel if desired.

Notes

The saucy layer forms naturally underneath while baking—do not stir. Serve warm for best texture and flavor. Sweetness can be adjusted by reducing sugar slightly.
