Ingredients

  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 4 large eggs, beaten
  • 1 cup vegetable oil
  • 1.5 cups self-rising flour
  • 1 teaspoon vanilla extract
  • 2 cups pecans, finely chopped

Equipment

  • mixing bowl
  • wooden spoon or whisk
  • 9x13-inch baking dish
  • measuring cups and spoons
  • spatula

Method

  1. Preheat the oven to 350°F (175°C). Lightly grease and flour a 9x13-inch baking dish to prevent sticking.
  2. In a large bowl, combine granulated sugar, brown sugar, beaten eggs, and vegetable oil. Stir until smooth and fully blended.
  3. Stir in self-rising flour and vanilla extract until the batter forms. Do not overmix.
  4. Add the finely chopped pecans and stir gently until evenly distributed throughout the batter.
  5. Pour batter into the prepared baking dish, smoothing the top. Bake for 30–35 minutes or until golden and a toothpick comes out clean.
  6. Allow to cool in the pan for 10 minutes before cutting into squares. Serve warm or at room temperature.

Notes

  • Use finely chopped pecans for a consistent, tender texture.
  • For extra indulgence, top with a light sugar glaze or drizzle with caramel sauce.
  • Store leftovers in an airtight container to keep them soft and moist.
