Ingredients
  

  • 8 oz unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 tsp salt
  • 1 1/2 tsp pure vanilla extract
  • 1 large egg yolk
  • 2 cups all-purpose flour

Method
 

  1. In a large mixing bowl, beat butter, sugar, salt, and vanilla until smooth and creamy. Add the egg yolk and mix until fully combined. Scrape down the bowl as needed.
  2. Gradually mix in flour until just incorporated. Do not overmix.
  3. Turn the dough onto a lightly floured surface. Knead gently a few times until smooth. Shape into a log, wrap in plastic wrap, and refrigerate for at least 2 hours (or freeze for later use).
  4. Preheat oven to 325°F (160°C). Line baking sheets with parchment paper.
  5. Slice chilled dough into ⅛-inch thick rounds. Place cookies about 1 inch apart on the prepared baking sheets.
  6. Bake for 16–18 minutes, or until edges are just beginning to turn golden.
  7. Let cookies cool on a wire rack before serving or storing.

Notes
