Asparagus Stuffed Chicken Breast

Ingredients:

  • 4 Skinless boneless chicken breasts (about 1 1/2 lb.)
  • 1 tsp Italian seasoning mix
  • 1 tsp Garlic Powder
  • 1 tsp Smoked Paprika
  • Sea salt and pepper, to taste
  • 12 Asparagus stalks, ends trimmed
  • 1 oz Sun-dried Tomatoes, chopped
  • 4 slices Mozzarella Cheese
  • 1 tbsp Olive Oil

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Place the chicken breasts on a clean chopping board and sprinkle them with Italian seasoning, garlic powder, paprika, salt, and pepper.
  3. Carefully cut each chicken breast lengthwise to create a pocket, making sure not to cut all the way through.
  4. Stuff each chicken breast with 3 asparagus sprigs, some sun-dried tomatoes, and a slice of Mozzarella cheese. Secure the pocket with a toothpick.
  5. Heat olive oil in a large cast-iron skillet over medium-high heat.
  6. Add the stuffed chicken breasts to the skillet and sear them until they are nicely golden brown, about 3-5 minutes per side.
  7. Transfer the skillet to the preheated oven and bake the chicken for 15-20 minutes, or until it is cooked through and is no longer pink in the center.
  8. Remove the toothpicks from the chicken breasts before serving.
