Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1 can Ro*Tel diced tomatoes with chiles, drained
  • 1 can Nacho Cheese Soup
  • 1/4 cup sour cream
  • 1 cup grated cheddar cheese
  • 12 8-inch soft tortillas (gluten-free if needed)
  • Guacamole, cilantro, additional sour cream for topping (optional)

Preparation

  1. Preheat your oven to 350°F (175°C). Lightly spray a 9×9 inch baking dish with non-stick cooking spray.
  2. In a large skillet over medium heat, cook the ground beef until it’s fully browned. Crumble the beef as it cooks. Drain any excess grease.
  3. Stir in the taco seasoning and water. Let it simmer for about 2 minutes.
  4. In a medium mixing bowl, combine the drained Ro*Tel tomatoes, nacho cheese soup, and 1/4 cup sour cream. Mix well.
  5. Add the cooked beef to the tomato and cheese mixture. Stir until everything is well combined.
  6. Lay 3 tortillas in the bottom of the prepared baking dish. Spread 1/3 of the beef mixture over the tortillas.
  7. Repeat the layers twice more, ending with a final layer of tortillas on top.
  8. Sprinkle grated cheddar cheese over the top layer of tortillas.
  9. Bake in the preheated oven for 20 minutes, or until the dish is hot and the cheese is melted and bubbly.
  10. Serve hot, garnished with chopped cilantro, guacamole, and extra sour cream on top, if desired.
