Ingredients
- 1 pound ground beef
- 1 packet taco seasoning
- 1/4 cup water
- 1 can Ro*Tel diced tomatoes with chiles, drained
- 1 can Nacho Cheese Soup
- 1/4 cup sour cream

- 12 8-inch soft tortillas (gluten-free if needed)

Preparation
- Preheat your oven to 350°F (175°C). Lightly spray a 9×9 inch baking dish with non-stick cooking spray.
- In a large skillet over medium heat, cook the ground beef until it’s fully browned. Crumble the beef as it cooks. Drain any excess grease.

- Lay 3 tortillas in the bottom of the prepared baking dish. Spread 1/3 of the beef mixture over the tortillas.
- Repeat the layers twice more, ending with a final layer of tortillas on top.
- Sprinkle grated cheddar cheese over the top layer of tortillas.
- Bake in the preheated oven for 20 minutes, or until the dish is hot and the cheese is melted and bubbly.
- Serve hot, garnished with chopped cilantro, guacamole, and extra sour cream on top, if desired.
