Beef Tips with Mushroom Gravy

Ingredients

  • 3 tablespoons butter
  • 2 lbs sirloin beef tips
  • 2 tablespoons all-purpose flour
  • 1 white onion, diced
  • 8 oz sliced cremini mushrooms
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 beef bouillon cube
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • 1/2 cup sliced pepperoncinis
  • 1 1/2 – 2 cups beef stock
  • 2 tablespoons cornstarch
  • Kosher salt and freshly ground black pepper, to taste

Instructions

For the Slow Cooker:

  1. Season beef with salt and pepper, then toss in flour to coat.
  2. Melt butter in a large skillet over medium-high heat. Sear beef on all sides until brown and crusty. Transfer to a plate and set aside.
  3. Add onions to the skillet and cook for 2 minutes, scraping up the bits from the bottom.
  4. Transfer beef and onions to the slow cooker. Add mushrooms, garlic powder, onion powder, thyme, rosemary, bouillon cube, Worcestershire sauce, bay leaf, pepperoncinis, and beef stock.
  5. Cover and cook on high for 3-4 hours or low for 6-7 hours.
  6. 30 minutes before finishing, whisk cornstarch with water and stir into the slow cooker. Cover and continue cooking for the remaining time. Season to taste.

For the Instant Pot:

  1. Follow steps 1 and 2 as above.
  2. Add beef back to the Instant Pot with onions. Add the remaining ingredients, using 1 1/2 cups beef stock.
  3. Cover and cook on the “Meat/Stew” setting for 35 minutes. Let the pressure release naturally for 10 minutes, then release remaining pressure manually.
  4. Turn on “Sauté” setting. Stir cornstarch with water and add to the Instant Pot. Simmer until the gravy thickens. Season to taste
