Ingredients
- 2 teaspoons olive oil
- Salt and pepper (to taste)
- 1 pound ground beef (I use 90% lean)
- 1 onion, finely chopped
- 2 teaspoons minced garlic
- 4 cups coarsely chopped cabbage
- 2 carrots, peeled, quartered, and sliced
- 4 cups beef broth
- 3 cans tomato sauce
- 1/2 cup uncooked long-grain rice
- 1 bay leaf
- 3 tablespoons brown sugar
- 2 tablespoons parsley
Instructions
- Heat the Olive Oil: In a large pot, heat the olive oil over high heat. Season with salt and pepper.
- Brown the Ground Beef: Add the ground beef to the pot. Using a spatula, break it apart and cook until browned, about 4 to 5 minutes.
- Add Onion and Garlic: Stir in the chopped onion and minced garlic. Cook for an additional 2-3 minutes until the onion is translucent.
- Add Vegetables and Broth: Add the coarsely chopped cabbage, sliced carrots, beef broth, tomato sauce, uncooked rice, bay leaf, and brown sugar to the pot. Season with salt and pepper.
- Bring to a Boil: Bring the mixture to a boil and then reduce the heat to a simmer.
- Simmer: Allow the soup to simmer for 25 minutes or until the rice is tender. Be sure to remove and discard the bay leaf.
- Garnish and Serve: Sprinkle the soup with chopped parsley and serve.
