Crispy Butter Chicken

Ingredients:

  • 2 large eggs, beaten
  • 1 cup Ritz cracker crumbs
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon black pepper
  • 4 chicken breasts, boneless, skinless (6 ounces each)
  • 1/2 cup butter, cut into pieces

Instructions:

  1. Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius).
  2. Place the beaten eggs and cracker crumbs in two separate shallow bowls.
  3. Mix the cracker crumbs with garlic salt and black pepper.
  4. Dip each chicken breast in the beaten eggs, ensuring it’s coated on all sides.
  5. Dredge the egg-coated chicken in the crumb mixture, pressing gently to adhere the crumbs to the chicken.
  6. Arrange the coated chicken breasts in a 9×13 inch baking dish, ensuring they are evenly spaced.
  7. Place pieces of butter on top of each chicken breast.
  8. Bake in the preheated oven for 30-35 minutes, or until the chicken is golden brown and cooked through.
  9. Remove from the oven and let it rest for a few minutes before serving.
