Double Chocolate Coca Cola Cake

Ingredients:

  • 1 cup Coca Cola (regular, not diet)
  • 1/2 cup oil
  • 1 stick butter
  • 6 tablespoons cocoa
  • 2 cups sugar
  • 2 cups flour
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/2 cup buttermilk
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla

Frosting:

  • 1 stick butter
  • 3 tablespoons cocoa
  • 6 tablespoons cream or milk
  • 1 teaspoon vanilla extract
  • 3 3/4 cups confectioner’s sugar

Directions:

  1. In a saucepan, combine Coca Cola, oil, butter, and cocoa. Bring the mixture to a boil.
  2. In a separate bowl, mix together the sugar, flour, and salt.
  3. Pour the boiling Coca Cola mixture over the flour mixture and beat well.
  4. Add the eggs, buttermilk, baking soda, and vanilla. Beat the mixture until well combined.
  5. Pour the batter into a greased and floured 13 x 9-inch baking pan.
  6. Bake at 350°F for 20 to 25 minutes or until a toothpick inserted in the center comes out clean.
  7. Remove the pan and let it cool for about 10 minutes before frosting.

Frosting:

  1. In a saucepan, combine the butter, cocoa, and milk. Heat the mixture until the butter melts.
  2. Beat in the remaining ingredients, including the vanilla and confectioner’s sugar, until smooth.
  3. Spread the frosting on the cake while it’s still warm.
