Ingredients:
- 3 pounds red potatoes, halved
- 2 tablespoons olive oil
- 5 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/3 cup grated Parmesan cheese
- Kosher salt and freshly ground black pepper, to taste
- 2 teaspoons unsalted butter
- 2 teaspoons chopped parsley leaves
Instructions:
- Preheat oven to 400 degrees F (200 degrees C). Prepare a baking sheet by coating it with non-stick spray or greasing the bottom with a thin layer of oil.
- In a large bowl, add the halved red potatoes.
- To the bowl of potatoes, add olive oil, minced garlic, dried thyme, dried oregano, dried basil, and grated Parmesan cheese.
- Season the mixture with salt and freshly ground black pepper according to your taste preferences.
- Mix all the ingredients together until the potatoes are evenly coated with the seasoning mixture.
- Spread the seasoned potatoes out in an even layer on the prepared baking sheet, placing them peel side up.
- Bake in the preheated oven for about 25-30 minutes, or until the potatoes are slightly crispy. Flip them halfway through the baking time to ensure even browning.
- While the potatoes are baking, melt the butter either on the stove or in the microwave for about 1 minute.
- Once the potatoes are done, remove them from the oven and drizzle the melted butter over the top.
- Garnish the roasted potatoes with chopped parsley leaves before serving.
