These Holiday Maraschino Cherry Shortbread Cookies are a delightful treat that combines the rich flavors of buttery shortbread with the sweetness of maraschino cherries and chocolate chips. Here’s how to make these delightful cookies:

Ingredients:

  • 1 cup unsalted butter, room temperature
  • 1/2 cup powdered sugar
  • 1/2 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 3/4 cup maraschino cherries, chopped (make sure to drain them well on paper towels or use dried maraschino cherries)
  • 2/3 cup chocolate chips

Details:

  • Servings: 24 cookies
  • Preparation time: 20 minutes
  • Cooking time: 10-15 minutes per batch
  • Chilling time: 1-2 hours

Preparation:

Step 1 – Prepare the Dough:

  1. In a bowl, mix the all-purpose flour and salt, and set this mixture aside.
  2. In another bowl, cream together 1 cup of softened unsalted butter with 1/2 cup of powdered sugar. Add the vanilla extract and mix well.
  3. Gradually add the flour and salt mixture to the butter-sugar mixture. Mix until the dough starts forming larger clumps.
  4. Stir in the chocolate chips and the chopped maraschino cherries.

Step 2 – Chill the Dough: 5. Form the dough into a log that is about 2 inches thick. Be sure to press it together firmly to prevent crumbling when slicing the cookies. Wrap the dough log in plastic wrap and chill it in the fridge for at least 1-2 hours.

Step 3 – Preheat and Slice: 6. Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.

  1. Remove the chilled dough log from the fridge and cut it into 1/4 or 1/3 inch thick slices. If the slices crumble, gently press them back together with your hands.
  2. Place the cookie slices onto the prepared baking sheet with about one inch of space between them.

Step 4 – Bake and Cool: 9. Bake the cookies in the preheated oven for 10 to 15 minutes, or until they just start to turn lightly golden brown on top.

  1. Let the cookies cool for 5 minutes on the baking sheet before transferring them to a wire rack to cool completely.

Enjoy these Holiday Maraschino Cherry Shortbread Cookies as a delightful festive treat or any time of the year for a burst of sweet and tangy flavor in every bite
