Mom’s Butter Baked Chicken

Ingredients:

  • 4 chicken breasts (boneless, skinless)
  • 1 can evaporated milk (12 oz)
  • 1 cup flour
  • 1 1/2 teaspoons salt
  • 1/8 teaspoon pepper
  • 1/4 cup butter
  • 1 can Cream of Chicken soup
  • 1/4 cup water

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Pour a small amount of evaporated milk into a shallow dish, just enough to dip each piece of chicken in.
  3. Dip each chicken breast in the milk, then roll it in the flour seasoned with salt and pepper.
  4. In a 13×9 inch baking pan, melt the butter in the preheated oven.
  5. Once the butter is melted, place the chicken in the pan and bake for 30 minutes at 350°F.
  6. While the chicken is baking, mix together the water, Cream of Chicken soup, and the remaining evaporated milk from the can.
  7. After 30 minutes of baking, turn the chicken over in the pan and pour the soup mixture over the top.
  8. Return the pan to the oven and bake for an additional 30 minutes, or until the chicken is cooked through and golden brown.
  9. Serve Mom’s Butter Baked Chicken hot, and enjoy!
