One Pot Lasagna Soup

Ingredients:

  • 1 lb ground beef
  • 1 lb ground Italian sausage
  • 10 lasagna noodles
  • 1 onion, chopped
  • 24 oz jar of pasta sauce
  • 4 tsp minced garlic
  • 8 cups chicken broth
  • 2 tbsp tomato paste
  • 14 oz can diced tomatoes
  • 1 tsp sugar
  • 2 tsp balsamic vinegar
  • 2 tsp dried basil
  • 1 tsp dried oregano
  • 1 bay leaf
  • Salt and pepper to taste

Instructions:

  1. In a large pot over medium-high heat, add the ground beef, onion, and Italian sausage. Cook until completely browned. Drain any excess fat.
  2. Return the pot to the stove, add the minced garlic, and sauté for 30 seconds.
  3. Pour in the pasta sauce, diced tomatoes, tomato paste, chicken broth, sugar, balsamic vinegar, dried basil, dried oregano, bay leaf, and salt and pepper to taste.
  4. Cover the pot and bring the mixture to a boil.
  5. Break the lasagna noodles into pieces and add them to the pot.
  6. Reduce the heat to medium-low and cook until the noodles have softened.
  7. Remove the bay leaf before serving.
  8. Top each serving with Parmesan cheese, mozzarella, or ricotta, if desired. Serve hot.
