Sour Cream Chicken Enchilada Casserole

Ingredients:

  • 4 cups cooked and shredded chicken
  • ½ cup sour cream
  • 1 can cream of chicken condensed soup
  • ½ cup milk
  • 1 can chopped green chilis
  • 2 cups shredded Mexican Fiesta blend cheese
  • 1 tsp garlic powder
  • 2 tsp onion powder
  • Salt and pepper to taste
  • 12 corn tortillas

Instructions:

  1. Preheat the oven to 350°F.
  2. Spray the bottom of a 9 x 13 baking dish with non-stick spray.
  3. Layer 6 tortillas at the bottom of the baking dish.
  4. In a mixing bowl, combine the cream of chicken soup, milk, sour cream, canned green chilis, salt, pepper, garlic powder, and onion powder.
  5. Spread half of the shredded chicken evenly over the layer of tortillas.
  6. Scoop half of the liquid mixture over the chicken.
  7. Sprinkle half of the shredded cheese over the top.
  8. Repeat steps 3 through 7.
  9. Bake for 40 minutes, then let rest on the counter once done baking.
  10. Garnish with chopped green onions.
  11. Enjoy your delicious sour cream chicken enchilada casserole!
