TENNESSEE PEACH PUDDING

Ingredients:

Filling

  • 5 cups peaches, peeled and diced fresh or frozen
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 cup whole milk
  • 4 teaspoons baking powder
  • 1 tablespoon sea salt
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon nutmeg

Topping

  • 3/4 cup brown sugar
  • 3/4 cup sugar
  • 3 tablespoons unsalted butter
  • 3 cups water
  • 1/2 teaspoon nutmeg
  • Cool whip/ice cream/whipped cream (Optional garnish)

Preparation:

  1. Preheat oven to 400°F and lightly grease a 9×13-inch baking dish with nonstick butter.
  2. In a large pot over medium heat, mix together brown sugar, nutmeg, sugar, and then add butter and water. Bring to a boil, stirring until sugar dissolves completely. Remove from heat and set aside.
  3. In a bowl, mix together sugar, flour, baking powder, salt, cinnamon, and nutmeg until well blended.
  4. Whisk in milk and vanilla extract until smooth, then add diced peaches.
  5. Fill the prepared baking dish, then sprinkle topping over it.
  6. Place the baking dish in the oven and bake for 50-55 minutes. Cover with aluminum foil if necessary until the mixture is cooked.
  7. Remove from oven and allow to cool for 15 minutes before serving. Optional: Garnish with Cool Whip, ice cream, or whipped cream.
