Ingredients
  

  • 1 lb ground beef
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 cup bell peppers, diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 2 cups shredded cheese
  • 1 tbsp olive oil
  • salt and pepper, to taste

Method
 

  1. Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned. Drain excess fat.
  3. Add onion, bell peppers, and garlic. Sauté until softened. Stir in chili powder and cumin.
  4. Add diced tomatoes, beans, and corn. Simmer for 5 minutes, seasoning with salt and pepper to taste.
  5. Spread half of the beef mixture into the baking dish and sprinkle with 1 cup of cheese. Add remaining beef mixture and top with remaining cheese.
  6. Bake uncovered for 25–30 minutes until cheese is melted and bubbly.
  7. Let rest for 5–10 minutes before serving.

Notes

  • This casserole thickens as it cools, making leftovers even better the next day.
  • Adjust spice levels by adding smoked paprika or reducing chili powder.
