Mix flour and salt. Add yeast mixture and melted butter. Stir until dough forms, then knead 5–7 minutes.
Place dough in an oiled bowl, cover, and let rise 1–1½ hours until doubled.
Punch down dough, divide into 8 pieces, roll into ropes, and shape into pretzels.
Boil pretzels in baking soda water for 30 seconds each, then transfer to baking sheet.
Brush with egg wash, sprinkle with cinnamon sugar, and bake at 375°F (190°C) for 12–15 minutes until golden.
