Ingredients
  

  • 2.5 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 cup butter, softened
  • 1.5 cups granulated sugar
  • 2 large eggs
  • 2 tbsp fresh lemon juice
  • 2 tsp grated lemon zest
  • 1 tsp vanilla extract
  • powdered sugar, for dusting

Method
 

  1. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat butter and sugar until light and fluffy.
  4. Mix in eggs one at a time, then stir in lemon juice, lemon zest, and vanilla extract.
  5. Gradually add dry ingredients to the wet mixture, stirring until just combined.
  6. Drop spoonfuls of dough onto baking sheets, leaving 2 inches apart.
  7. Bake for 10–12 minutes or until edges are golden.
  8. Cool cookies on the baking sheet for 5 minutes, then transfer to a wire rack. Dust with powdered sugar.

Notes

  • For a stronger lemon flavor, increase zest to 3 teaspoons.
  • If you prefer less sweetness, reduce sugar by ¼ cup without affecting texture.
  • These cookies are best enjoyed fresh but also freeze well for future snacking.
