Strawberry Cheesecake

Instructions

1. 1 Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
2. 2 Mix graham cracker crumbs, sugar, and melted butter until combined. Press firmly into the bottom of the pan.
3. 3 Bake the crust for 8–10 minutes, then let cool.
4. 4 In a large mixing bowl, beat cream cheese until smooth. Add sugar, sour cream, lemon juice, and vanilla, mixing until creamy.
5. 5 Add eggs one at a time, mixing on low speed until just combined.
6. 6 Pour the batter over the cooled crust.
7. 7 Bake for 50–55 minutes, or until the center is slightly jiggly but set around the edges.
8. 8 Turn off the oven, crack the door, and let the cheesecake cool for 1 hour.
9. 9 Refrigerate for at least 4 hours or overnight.
10. 10 For topping: toss sliced strawberries with sugar. Warm strawberry jam slightly and drizzle over berries.
11. 11 Top the chilled cheesecake with strawberries before serving.
