Ingredients
- 1 box fudge brownie mix (19.5 ounce or family size)
- 2 teaspoons vanilla extract
- 1 teaspoon cornstarch
- 1/4 cup butter, melted
- 4 ounces cream cheese, softened
- 1 egg
- 1 cup powdered sugar
- 1 cup creamy peanut butter
- 4 ounces semi-sweet chocolate chips
Preparation
- Preheat and Prepare the Dough:
- Preheat your oven to 350°F (175°C).
- In a medium bowl, use a hand mixer to combine the brownie mix, vanilla extract, cornstarch, melted butter, cream cheese, and egg. The dough will be sticky.
- Shape and Bake Cookies:
- Scoop the dough onto an ungreased cookie sheet, smoothing the edges to form round cookies.
- Bake in the preheated oven for 12 minutes.
- Make Peanut Butter Balls:
- While cookies are baking, mix the powdered sugar and peanut butter together in a separate bowl.
- Form the mixture into 1-inch balls, one for each cookie, and set aside.
- Combine Cookies with Peanut Butter:
- Once the cookies are out of the oven, immediately press a peanut butter ball lightly into the center of each cookie. The heat will soften the peanut butter.
- Cool and Add Chocolate:
- Let the cookies cool for about 5 minutes before transferring them to a wire rack.
- Melt the chocolate chips in a microwave-safe bowl, using 30-second increments, stirring until smooth.
- Spoon about 1/2 tablespoon of melted chocolate over the peanut butter ball on each cookie, covering it completely.
- Finalize:
- Allow the chocolate to set. You can place the cookies in the refrigerator to speed up this process.
- Storage:
- Store your Buckeye Brownie Cookies in an airtight container to keep them fresh.
Enjoy these decadent treats whenever you crave a burst of peanut butter and chocolate!
