Cornbread Recipe
Ingredients:
- 2 cups self-rising flour
- 1 cup cornmeal
- 1/2 cup oil (plus 1/4 cup for the skillet)
- 2 cups or more buttermilk (enough to make the batter very wet)
Optional for Mexican Cornbread:
- 2 eggs
- 1 can creamed corn
- Chopped onion (amount to taste)
- Peperoncini peppers (amount to taste)
- Chopped green pepper (amount to taste)
- 1 small bag of sharp cheddar cheese
- A little pepper juice (from the peperoncini jar)
Instructions:
- Preheat your oven to 450°F (232°C).
- Put 1/4 cup of oil into a cast-iron skillet and place it in the oven to heat up.
- In a large mixing bowl, combine the flour, cornmeal, and 1/2 cup of oil.
- Gradually mix in enough buttermilk to make a very wet batter.
- If making Mexican cornbread, beat in two eggs, then fold in the creamed corn, onion, peperoncini peppers, green pepper, cheddar cheese, and a bit of pepper juice.
- Once the skillet is hot, carefully remove it from the oven and pour the batter in. The oil should be hot enough to sizzle.
- Bake in the preheated oven until the cornbread is golden and a toothpick inserted in the center comes out clean, typically around 20-25 minutes.
Cabbage Soup Recipe
Ingredients:
- 1 small head of cabbage, chopped
- 2 lbs ground sirloin
- 3 large cans of whole tomatoes, squashed
- 1 tablespoon chili powder
- 1 green pepper, chopped
- 3 large onions, chopped
- 4 dashes of Texas Pete hot sauce (or to taste)
- 1 large can kidney beans
- 3 cups cooked pinto beans
- Water (enough to make the soup soupy)
Instructions:
- Brown the ground sirloin with the chili powder in a large pot or dutch oven over medium-high heat.
- Once the meat is browned, add in the onions, green pepper, and cook until the vegetables start to soften.
- Add the chopped cabbage, kidney beans, pinto beans, and the squashed whole tomatoes.
- Pour in enough water to give the soup the consistency you desire.
- Bring the soup to a boil, then reduce the heat and let it simmer for at least an hour, allowing the flavors to meld.
