Ingredients
- 2 cups (4 sticks) unsalted butter, divided
- 1 cup packed light brown sugar
- 1 cup granulated sugar
- 1 (14-ounce) can sweetened condensed milk
- 1 teaspoon vanilla extract
- 1 cup semisweet chocolate chips
- 1 cup chopped pecans

- Prepare the Baking Sheet:
- Line a baking sheet with parchment paper for easy cleanup and non-stick candy removal.
- Make the Caramel:
- In a large saucepan over medium heat, combine 1 cup (2 sticks) of unsalted butter, the light brown sugar, granulated sugar, and sweetened condensed milk.
- Stir the mixture constantly as it comes to a boil.
- Once boiling, reduce the heat to low and let it simmer for 5 minutes, maintaining constant stirring to prevent burning.
- Form the Caramels:
- After simmering, remove the saucepan from the heat and stir in the vanilla extract.
- Drop the caramel by rounded tablespoons onto the prepared baking sheet.
- Allow the caramel to cool slightly but not completely set; they should still be tacky for the pecans to adhere properly.
- Prepare the Chocolate:
- Melt the remaining 1 cup (2 sticks) of unsalted butter and the chocolate chips together. This can be done in a microwave in 30-second intervals, stirring in between, or over a double boiler on the stove.
- Assemble the Turtles:
- Dip each piece of slightly cooled caramel into the melted chocolate mixture, ensuring they are well-coated.
- Return the chocolate-covered caramels to the baking sheet.
- Add Pecans:
- Immediately sprinkle each chocolate-covered caramel with chopped pecans before the chocolate sets.
- Let Cool:
