Ingredients:
- 2 tsp olive oil
- ⅓ cup honey
- ¼ cup soy sauce

Directions:
Step 1: Marinate the Shrimp
- In a medium-sized mixing bowl, whisk together the honey, soy sauce, minced garlic, and ground ginger until well combined.
- Pour half of this marinade mixture into a large Ziploc bag.
- Add the shrimp to the bag with the marinade, seal it while pressing out as much air as possible, and gently toss to coat the shrimp evenly.
- Place the bag in the refrigerator and let the shrimp marinate for at least 15 minutes, or up to 10 hours for deeper flavor.
Step 2: Cook the Shrimp
- Heat the olive oil in a large skillet over medium-high heat.
- Once the oil is hot, remove the shrimp from the marinade (discarding the used marinade) and place them in the skillet.
- Cook the shrimp for about 45 seconds on one side, until they start to turn pink.
- Flip the shrimp over to the other side.
Step 3: Finish Cooking
- Pour in the remaining half of the fresh marinade over the shrimp.
- Continue to cook for another 1 to 2 minutes, or until the shrimp are fully cooked and the sauce has thickened slightly. The shrimp should be opaque and coral in color when done.
To Serve:
- Serve the honey garlic shrimp over a bed of brown rice or your choice of side.
- Garnish with chopped green onions for a pop of color and freshness.
