Ingredients:
- 1 lb lean ground beef
- 1 packet taco seasoning
- Vegetable oil, as needed
- 8 taco size flour tortillas
- 1 (15 oz) can refried beans
- 1 (10 oz) can red enchilada sauce
- 2 cups shredded Mexican cheese blend
For Topping:
- Tomatoes, diced
- Green onion, sliced
Instructions:
- Preheat Oven:
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Cook Ground Beef:
- In a large skillet over medium-high heat, brown the ground beef, breaking it up as it cooks. Once cooked, drain excess grease, then add the taco seasoning and 1 cup of water. Simmer until most of the liquid cooks off.
- Crisp Tortillas:
- In a separate skillet over medium heat, heat about 2 tablespoons of vegetable oil. Cook tortillas one at a time until crispy, flipping frequently, for about 3-4 minutes each. Add more oil as needed and set browned tortillas aside.
- Prepare Pizza Layers:
- Warm refried beans until spreadable. Spread refried beans on 4 tortillas, then top with the seasoned ground beef. Place the remaining tortillas on top.
- Add Enchilada Sauce and Cheese:
- Cover each assembled pizza with about 2 tablespoons of enchilada sauce. Sprinkle each with 1/2 cup of shredded Mexican cheese.
- Bake:
- Place the assembled pizzas on the prepared baking sheet and bake until the cheese is melted, approximately 8-10 minutes.
- Top and Serve:
- Top the pizzas with diced tomatoes and sliced green onions. Serve and enjoy your homemade Taco Bell-style Mexican Pizza!
Notes:
- Customize with additional toppings such as sour cream, sliced olives, or jalapeños based on personal preference.
- For a spicier version, consider adding hot sauce or using a spicy enchilada sauce
