Slow Cooker Hamburger Potato Casserole

Ingredients:

  • 1 pound ground beef
  • 1 onion, finely diced
  • 4 potatoes, diced
  • 1 can condensed cream of mushroom soup
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 cup shredded cheddar cheese
  • 2 tablespoons bread crumbs

Instructions:

  1. In a skillet over medium heat, brown the ground beef and onions. Drain any excess moisture.
  2. In your slow cooker, create a base layer with the diced potatoes, then evenly spread the browned beef and onion mix on top.
  3. Mix together the mushroom soup, milk, salt, and pepper in a bowl until smooth. Pour this mixture over the beef and potatoes in the slow cooker.
  4. Set your slow cooker to low and cook for 6-8 hours, or on high for 4-5 hours, until the potatoes are tender.
  5. An hour before the cooking time is up, sprinkle the shredded cheddar cheese and bread crumbs over the top. Replace the lid to allow the cheese to melt and the bread crumbs to turn golden.
