Ingredients:
- 1 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1/2 cup granulated sugar substitute (such as Swerve or Stevia)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsweetened applesauce
- 1/4 cup plain non-fat Greek yogurt
- 1/4 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen cranberries
Instructions:
- Preparation: Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing and flouring it or coating it with cooking spray.
- Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, whole wheat flour, granulated sugar substitute, baking powder, baking soda, and salt.
- Wet Ingredients: In a large mixing bowl, combine the unsweetened applesauce, plain non-fat Greek yogurt, softened butter, egg, and vanilla extract. Mix until well combined.
- Combine Ingredients: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the fresh or frozen cranberries until evenly distributed in the batter.
- Prepare Cream Cheese Swirl: In a separate bowl, beat together the softened fat-free cream cheese, powdered sugar substitute, and vanilla extract until smooth.
- Layer and Swirl: Pour the batter into the prepared loaf pan. Drop spoonfuls of the cream cheese mixture onto the batter in the loaf pan, then use a knife to swirl the cream cheese into the batter to create a marbled effect.
- Bake: Bake in the preheated oven for about 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Cool and Serve: Allow the loaf to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing and serving.
