Ingredients:
- 1/2 avocado, sliced
- 4 slices mozzarella cheese
- 4 cherry tomatoes, sliced in half
- 2 slices multigrain bread (such as Ezekiel sprouted grain bread)
- Butter
Instructions:
- Butter the outside layers of the bread slices.
- Place one slice of bread, buttered side down, in a frying pan heated over medium heat.
- Layer the mozzarella cheese, sliced cherry tomatoes, and avocado slices on top of the bread slice in the pan.
- Place the other slice of bread on top, buttered side up.
- Flip the sandwich after a few minutes, once the bottom is golden brown.
- Cook until both sides are golden brown and the cheese is melted and gooey on the inside.
- Remove from the pan, slice if desired, and serve hot.
